October Networking Luncheon @ Drysdale Restaurant

Join us for our October luncheon at Drysdale Restaurant.

The luncheon will be prepared and served by students of Certificate III Commercial Cookery and Certificate II & III of Hospitality.  All wines will be supplied by Tim Goddard of Cool Wines.

Special guest speaker is Jason Licht from Cumulus Studios – our 2017/2018 TICT & SKAL Future Leaders Scholarship recipient.  Jason will present an update on the proposed outcomes of his scholarship project and the next steps to achieve a design-led strategy for Tasmania.

Cost per person is $80.00 including beverages – this is a luncheon not to be missed!

MENU

Entrees (roving canapé style)

Lentil croquette, smoked labne, onion puree, chive oil, herbs
Fresh Tasmanian oysters on the half shell, champagne mignonette
Lamb fillet, mint jelly, celeriac puree, crouton

Main (alternate drop)

Seared striped trumpeter, scallop and cauliflower puree, broad beans, lemon crumb
Beef fillet, wasabi cheese rosti, thyme jus, spring vegetables
(Dietary option) Green pea gnocchi, carrot puree, green oil, hazelnuts, chevre, sage

Dessert (alternate drop)

Key lime tart, macerated strawberries, strawberry mousse
Chocolate marquise, vanilla sponge, walnut crème

Complemented by a selection of wines supplied by Cool Wines
